Sweet Potato Breakfast Bowl
During the elimination phase of AIP, breakfast was always difficult for me. I know the goal is to think of breakfast as just another meal and not in terms of ‘breakfast foods’ but the morning was just too soon for me to have any lunch or dinner type of meals. And I really missed oatmeal.
After doing some research I came across this Sweet Potato bowl. To be honest, I don’t remember where exactly I got this recipe from but I actually changed the original recipe quite a bit to make it as simple as possible, in true Daniela fashion.
The base is just two ingredients, sweet potatoes, and coconut milk.
The toppings - Whatever AIP compliant fruits you’d like (fresh or dried), tigernuts for some crunch, and coconut flakes for a little extra tastiness, coconut yogurt, etc.
INGREDIENTS
🍠¾ Cup (pre-cooked) diced Sweet Potatoes
🍠½ Cup Coconut Milk
DIRECTIONS
👉Add sweet potatoes and coconut milk to pot on medium heat.
👉As the pot warms, begin to mash up the sweet potatoes until a creamy texture is formed.
👉Scoop mashed sweet potatoes into bowl.
👉Top with favorite toppings of choice and enjoy!
