Poke Bowl

 
 

Usually on the weekends we have small amounts of a variety of veggies left over from the week. We like to throw them together, add some tuna, a bit of lemon juice, and WAH-LAH, we have this magical and colorful ‘Poke’ Bowl. ⁠

It makes for a fun and refreshing Saturday lunch. And you can substitute the tuna with salmon or shrimp. Get creative and make it your own!⁠

INGREDIENTS⁠
🌿Tuna, Shrimp, Salmon⁠
🌿Cauliflower Rice⁠
🌿Spinach ⁠
🌿Cucumbers⁠
🌿Shredded Carrots⁠
🌿Diced Radishes ⁠
🌿Cilantro⁠
🌿Lemon Juice⁠
🌿Pickled (or fresh) Onions⁠
🌿Pineapple or Mango⁠
🌿Avocado⁠

DIRECTIONS⁠
👉Mix together the tuna, cilantro, and lemon juice. Add some sea salt for extra flavor. ⁠
👉Cook cauliflower rice over a tsp of Extra Virgin Olive Oil. ⁠
👉Dice up all your veggies – chop the spinach, shred carrots, dice radishes, cut up pineapples, slice the avocado, chop cucumbers.⁠
👉Add cauliflower rice to bowl. Add veggies around the cauliflower rice. ⁠
👉Add tuna on top of rice. ⁠
👉Drizzle with extra lemon juice if you’d like and enjoy!⁠

👉Extra tip: Mix together a little honey and coconut aminos and drizzle over bowl for a more authentic poke bowl taste. ⁠
