Poke Bowl
Usually on the weekends we have small amounts of a variety of veggies left over from the week. We like to throw them together, add some tuna, a bit of lemon juice, and WAH-LAH, we have this magical and colorful ‘Poke’ Bowl.
It makes for a fun and refreshing Saturday lunch. And you can substitute the tuna with salmon or shrimp. Get creative and make it your own!
INGREDIENTS
🌿Tuna, Shrimp, Salmon
🌿Cauliflower Rice
🌿Spinach
🌿Cucumbers
🌿Shredded Carrots
🌿Diced Radishes
🌿Cilantro
🌿Lemon Juice
🌿Pickled (or fresh) Onions
🌿Pineapple or Mango
🌿Avocado
DIRECTIONS
👉Mix together the tuna, cilantro, and lemon juice. Add some sea salt for extra flavor.
👉Cook cauliflower rice over a tsp of Extra Virgin Olive Oil.
👉Dice up all your veggies – chop the spinach, shred carrots, dice radishes, cut up pineapples, slice the avocado, chop cucumbers.
👉Add cauliflower rice to bowl. Add veggies around the cauliflower rice.
👉Add tuna on top of rice.
👉Drizzle with extra lemon juice if you’d like and enjoy!
👉Extra tip: Mix together a little honey and coconut aminos and drizzle over bowl for a more authentic poke bowl taste.
