Sunday Salmon

 
 

Sunday Salmon dinner has become a year-round tradition at our house, whether I am doing the elimination phase of AIP or not. Initially, it was a way for us to decrease decision fatigue on Sunday evenings. We knew it would always be Salmon, sweet potatoes, and salad. And then we realized it was a really great way for us to get an extra serving of Omega 3’s and ensure that we stay connected to AIP on a weekly basis. ⁠

INGREDIENTS ⁠
🌿Salmon⁠
🌿Sweet Potatoes ⁠
🌿Mixed Greens Salad⁠
🌿Carrots⁠
🌿Chopped Cabbage⁠
🌿Apple Cider Vinegar ⁠
🌿Lemon⁠
🌿Sea Salt ⁠
🌿Thyme ⁠

DIRECTIONS⁠

  1. Chop the sweet potatoes into cubes or fries (your preference here!)

  2. Bake in the oven for 35-40 minutes (depending on thickness)

  3. Season the salmon with thyme, lemon, and sea salt.

  4. Sear on the (oven-safe) skillet for 3-4 minutes. Transfer skillet to oven and bake for 12-15 minutes.

  5. While salmon is in the oven, mis the greens, cabbage, and carrots in a large bowl.

  6. Add 1 TBSP of Apple Cider Vinegar, a squeeze of lemon juice, and a pinch of sea salt.

  7. Remove salmon, sweet potatoes from oven. Serve on plate and add salad (as much as you desire!)

  8. ENJOY!
